I mine a fair bit and I don't experience any griefing. Try finding an out of the way place to mine. During organized events like Hulkageddon, I just log and play other games, generally.

What amazes me about PLEX is that so many people spend real money on them to convert into game currency through the market. Enough folks do this to support all the people who pay for their accounts with PLEX. Says a lot about how fun making ISK ...

I vaguely recall that someone tried this after I started in playing in 2008. At the time, the price of trit was close to 4 isk/unit. I can't recall what the fuss was about back then, but I remember the unionization talk.
